Türkiye combines a young population of roughly 85 million, rapid urbanisation and a large, recovering inbound-tourism sector. Published estimates of the foodservice market vary more than in most countries and it is worth knowing why before quoting a number: they range from roughly USD 14–15 billion on a profit-sector basis (Mordor Intelligence) to about USD 23 billion (MarketLine, 2024) and up to some USD 44 billion on the widest definitions.
