Norway has a population of roughly 5.5 million, but per-capita food and out-of-home spending is high. The professional foodservice market — restaurants, hotels and institutional kitchens — is estimated to be worth in the order of NOK 90–110 billion, roughly EUR 7.5–9 billion. It is a small market by headcount and a substantial one by value, which changes what a foreign supplier should optimise for: margin and product fit rather than raw volume. Norwegian grocery and foodservice supply is unusually concentrated in three vertically integrated groups — NorgesGruppen with its wholesale arm ASKO, Coop Norge and Reitan/REMA 1000 — which buy for both retail and the professional channel. Alongside them sits a layer of independent regional wholesalers organised in buying groups, one of which brings together around 13 to 14 regional members with a combined turnover of approximately EUR 400 million and is often the more realistic first door for a newcomer.
